Barnacle Bill's Beer Batter Deep Fried Chicken Stips

So another awesome recipe from Capt Barnacle Bill. We did up some chicken strips for Memorial Day and man were they good! We started with four chicken breasts, boneless and skinless. Cut them cross ways a little more than finger width.

Start to heat the oil if you haven't done so yet. It will take a couple minutes to get good and hot if you are using a deep pot or wok on the stove. If you are using an electric deep fryer you should start heating the oil prior to peeling the onions (electric deep fryers can take 3o minutes or longer to heat to 375 degrees depending on the size of the fryer).

We then dusted them in a little flour, knock off any excess flour, and then put them into the Barnacle Bill's Beer Batter and coated them well. Then lowered the strips into the hot oil. Be careful the oil will pop a bit.

Cook the strips for 2 - 3 minutes until the Barnacle Bill's Beer Batter is a dark golden brown. Remember, this is chicken so you want to make sure it gets cooked thoroughly. It is a good idea to cut the first one or two in half to make sure they are getting cooked all the way through.

Once you are satisfied the chicken is getting cooked properly continue cooking the rest of your chicken strips. Cook in small batches, this depends on the size of your deep fryer. It is always a good idea to let the oil heat up again between batches, about 1 minute.

Let the chicken strips cool for several minutes before attempting to eat so you don't burn yourself.

Enjoy your chicken strips with your favorite sauce or dressing!

Prep time: 20 - 30 minutes (depends on your deep fryer)
1 Bag Barnacle Bill's Beer Batter
16 oz Ice cold beer (Your favorite flavor, I used my own personal homebrew for this batch)
4 - 6 large chicken breasts
1 cup flour

Cooks enough chicken for 4 - 6 servings. You might even have enough Barnacle Bill's Beer Batter left over to cook up some Awesome Barnacle Bill's Beer Batter Onion Rings

Barnacle Bill's Beer Batter Awesome Onion Rings

That's right! for the best onion rings you've ever had, you have to try them Barnacle Bill's Beer Batter style.

First select 3 - 4 medium to large onions (we suggest Maui Sweet Onions if you can get them). Peel the onions and rinse well with water to remove any dirt or onion skin particles. Cut onions 1/4 - 3/8 inch thick. The use of a food slicer that you can set the thickness on to get nice evenly cut rings is a big plus. Gently separate the rings to prepare for cooking.

Start to heat the oil if you haven't done so yet. It will take a couple minutes to get good and hot if you are using a deep pot or wok on the stove. If you are using an electric deep fryer you should start heating the oil prior to peeling the onions (electric deep fryers can take 3o minutes or longer to heat to 375 degrees depending on the size of the fryer).

Once the oil has reached cooking temperature empty one bag of Barnacle Bill's Beer Batter into a large mixing bowl. The pouch is resealable so for fewer people you do not have to use the entire bag. Add your favorite ice cold beer to the batter mix until it reaches a pancake mix like consistency (about 16 oz for a whole bag). Use a wire whisk for best results.

Now we're ready to cook up some Awesome Onion Rings Barnacle Bill's Beer Batter Style!

Pick up the rings one at a time a dust them in flour, then put them into Barnacle Bill's Beer Batter and coat well with the batter. Now gently drop them into the hot oil. Continue putting onion rings in hot oil but do not put too many and do not let them overlap.

Cook for about one minute then flip the rings over for a minute to evenly cook the onion rings thoroughly. Onion Rings should be a nice golden brown in color.

Take out of the hot oil and place on a wire rack or on some paper towels to cool off a bit. When you can pick up the onion rings without burning your fingers they're ready to enjoy!

Items needed:
1 Bag Barnacle Bill's Beer Batter
3 - 4 Medium to large onions
16 oz of ice cold beer (your favorite flavor)
1 cup flour
Oil for your deep fryer or wok

Prep time about 30 minutes, servings about 8 - 10

Barnacle Bill's Beer Batter Cooking Tips

Cooking with Barnacle Bills Beer Batter is easy. Just follow the simple directions and you'll have a terrific treat.

1. Heat oil to 375 degrees while preparing your fish for cooking
2. Cut fish into 1 inch cubes for firmer fish, 2 - 3 inch fillets for more tender cuts (Ahi, Mahi Mahi, etc.)
3. Empty bag of Barnacle Bill's Beer Batter into bowl and add 16 ounces of your favorite ice cold beer. Use a wire whisk to mix thoroughly (should be pancake mix like consistency).
4. Roll fish in flour to give it a light dusting.
5. Now dip into beer batter and coat generously.
6. Gently drop into hot oil and cook 2 - 3 minutes until cooked to a golden brown (cooking time will vary depending on what you are cooking so be sure to check meat and foods before eating).
7. Place on a wire rack, or paper towels until cool enough to eat.
8. Enjoy plain or with your favorite sauce or malt vinger.

Barnacle Bill's Beer Batter Deep Fried Zucchini

Aloha,
Here's the way we like to cook up Beer Batter Fried Zucchini using Barnacle Bill's Beer Batter!

First, thoroughly rinse your zucchini. You want to make sure you get any dirt off that may have been missed during the processing for shipment.

Cut the stem off and the other end as well. Now cut the zucchini in half, or as close to the middle as you're comfortable with :-)

Here's the nice trick to this. Take the first half and stand it on it's end. Now cut it down the middle, give it a quarter turn, and cut it down the middle again, to give you for lengthwise quarters.

Now do the same with the other half. Repeat this process as many times as necessary until you have all the zucchini you want to cook with Barnacle Bill's Beer Batter and enjoy!

Beer batter was a hit!!!

Hi,My husband and I got to taste a sample of your batter at a show alittle while ago and we thought our one bite tasted good, so we bought one bag and I was hoping I could cook it the same. So for this fourth of July weekend we brought it to a neighbors house and made it for the first time. The pressure was on because there were a good amount of people at the get together and they were anticipating trying the beer batter. I have to say it was a hit!!! I was also pleased it turned out just like the first sample we ever tasted. We will be placing an order in the future because it was so simple and now I will need to have it as aregular supply in our kitchen.

Love the Batter!

Aloha Captain Barnacle!
I wanted to share my comments with you regarding your wonderful batter.We bought a few bags directly from you about a month ago at your lasttrade show here in Honolulu, Hawaii. We scheduled a "Fry Feast" withsome of our closest friends a few days later. We choose Guinness beeras our beer of choice, thinking that the bigger body of this beer wouldbe a perfect companion to your wonderful batter. We fried Opah,(moonfish) Au, (marlin) and some jumbo prawns. We also tried some homemade potato wedges and sweet potato fries. Onions, sweet red peppers,and zucchini spears all were dipped in to the magical batter and thendeep fried until golden brown. What a day!!! We all ate and drankuntil all was consumed. I can honestly say that you have made a few newcustomers for life and we look forward to out next day filled withBarnacle Bill's spectacular Beer Batter.

Oysters from Tomales Bay

I just fried some oysters from Tomales Bay. Cleaned, floured and grinded dem buggas. Awesome baby! No cocktail sauce for all. Dropped a little soy and was good to go.
